Strawberry lemon gelatin with coconut whipped topping

This is to die for! A perfect dessert for a party or special occasion, like breakfast.

1/2 cup lemon juice and
3 cups water boiled
Remove from heat and add
2 1/2 TBSP gelatin
Add 1/2 cup of raw honey
Add 3 cups of blended strawberries (frozen or fresh)
4 egg yolks (pastured please!)
I used a hand blender to mix this all. It gave it a wonderful frothy top.

Refrigerate in those small little containers, and the kids will love it!

Top jello with whipped coconut:

1 can of premium coconut milk, refrigerated.
Scoop out top of can, leaving coconut water.
Whip with electric beater.
Optional, add a a tbsp or two of maple syrup.
Top onto jello!

* note * using more gelatin (like 2 more TBSP) will make it like gummy candy! Pour into cake pan and cut into squares or use cookie cutters! You may want to add more honey, as the gelatin seems to take away some of the flavour.
