Nourishing Probiotic Jello that you can eat for breakfast.

Homemade Nourishing Probiotic jello: Very easy. Very good. Also great as a snack to take on the go.
Makes 8 cups.

6 cups of juice ( I used blackcurrant peach)
4 tbsp. Gelatin
One can of coconut milk
1/4 cup honey (approx, can use less
Or more)
1 1/2 cups of Frozen fruit (I used blueberries)
1/4 cup kefir or yogurt

The important thing with jello is not to burn the gelatin.
Heat half juice to boiling and remove from heat.
Add gelatin, whisking gently until dissolved.
add honey and stir until dissolved.
Add remainder of juice.
Add coconut milk and stir till smooth.
Add fruit.
Mix in kefir (or yogurt)

Now this is the extra special part!
Pour into little individual containers, and refrigerate. All four of my kids LOVE it! It’s such a novelty to have your own little cup of jello.
And it’s perfect to grab for on-the-go!
*The jello will separate into two layers, this is normal and wonderful!
